I love cooking. It all started when I was a little girl, with me watching my mum cook all our meals from scratch. My first memory of getting involved (and my mum was great at that, she always had the patience and the enthusiasm to have both my brother and myself “help” her out) was making dough balls on a winter’s day in my mum’s cosy, steamed up kitchen. Spanish Rice Recipe

Tonight, I decided to make paella. I hadn’t made it in ages and I am partial to chorizo and sticky rice so it had to be done. Emma smelled the chorizo being cooked and asked: “Mum, are you cooking bacon?” She wouldn’t admit it but she is getting a taste for good bacon. She is an Irish born and bred girl, after all, it was just a matter of time until it happened :-). I said: “No, Emma, it is not. I am cooking Spanish sausage.” She then went, out of the blue, “Oh, Spanish sausage! OLE!” When did this child of mine become such a polyglot?!? HelloFresh: Review

I love cooking. It relaxes me and it helps me express love. The months I spent in hospital with Georgie were really hard for me from this point of view as well. I express love through service and although I was there looking after my precious boy I felt that I was neglecting the other members of the family by not being able to provide meals cooked with care and love for them. Once we came back from Greece, after our time away this summer, I found it hard to get into cooking again. Not having cooked for almost half a year(!!), I had a hard time finding motivation, getting the portions and quantities right…etc. When I came across HelloFresh, who were running an offer at the time and offering their classic box for £20 instead of the usual £39, I decided to give it a go. Chicken skewers and beetroot salad

So we were in Dublin at the weekend. Greek hubby wanted to sample some home delicacies at one of the Greek restaurants we frequent when in Dublin but because he is such a fusspots food connoisseur, with high standards when it comes to food (and most other  things in life, as a matter of fact), he ended up disappointed with the food and I ended up with a couple of food orders for this week: Greek chicken skewers and lamb chops. So this evening I decided to honour his first request and made him some yummy chicken skewers. I love making them as they are one of the easiest dinners I can put together (less than half an hour), practically cooks itself and as a bonus, gets me points with hubby :-)! Basic ingredients: 600g chicken breast one courgette two small onions, cut into eights cherry tomatoes, cut into halves a couple of peppers Chop everything roughly and add them creatively on the skewers. Cheat’s Cinnamon Rolls

Good evening, everyone, a late post tonight but I promise you, a yummy one once again 🙂 The Brick Castle gave me the inspiration for this one on Monday. I do love cinnamon rolls but I find the bought in ones generally too greasy and heavy after a few bites so I have been forever looking for a good, semi-healthy recipe. I say semi-healthy because dough is generally seen as the bad guy in the nutrition game and if you add to the equation sugar and fat then things get one a bit…on the wrong side of the track. But since my appetite was whetted with the very visually appealing recipe mentioned above I decided to see if I can healthify it a bit and was very pleased with the results (read: I ate most of it myself over two and a half days.
