What this mummy loved in…September

I have entered a season of change and I have felt the almost overwhelming need to look after myself in the last month. In my last personal post I was talking about taking time off to figure out how things will go from here. Things haven’t been as straight forward as I would have needed them to be, as, in spite of being signed off work for a couple of weeks, peace has eluded me. Hubby suffers from what we now know to be SAD (Seasonal Affective Disorder) and instead of being able to rest, I have been worrying constantly last week about him (as his sadness seems to be much worse this year) and the future. So, my only way to find peace has been to draw on things that have brought me joy in drops this season. HelloFresh: Review

I love cooking. It relaxes me and it helps me express love. The months I spent in hospital with Georgie were really hard for me from this point of view as well. I express love through service and although I was there looking after my precious boy I felt that I was neglecting the other members of the family by not being able to provide meals cooked with care and love for them. Once we came back from Greece, after our time away this summer, I found it hard to get into cooking again. Not having cooked for almost half a year(!!), I had a hard time finding motivation, getting the portions and quantities right…etc. When I came across HelloFresh, who were running an offer at the time and offering their classic box for £20 instead of the usual £39, I decided to give it a go. Christmas presents for the healthy-minded loved ones

I know this post comes a bit too close to Christmas but if you are like me, always struggling to find appropriate Christmas presents for the healthy-minded ones in the family,  you might find it helpful. A few weeks back the lovely people at Global Bounty invited our wee family to choose from and then sent us a selection of their wonderful products to try out. We got gluten-free morning cereal, a couple of natural supplements from Iceland (the country!) for children and grown-ups and loads of yummy and variously flavoured ginger chews. We had a go at each and every one of them and were very satisfied with their quality. The muesli have NO artificial sweeteners, nor sugar added, only pure oats and dried fruit, to my health-conscious hubby’s delight! Highly recommended for coeliacs and people suffering from thyroid dysfunctions, like myself. The chews are great for ginger lovers, I use them for sore throats and bad breath, they work like magic! Chicken skewers and beetroot salad

So we were in Dublin at the weekend. Greek hubby wanted to sample some home delicacies at one of the Greek restaurants we frequent when in Dublin but because he is such a fusspots food connoisseur, with high standards when it comes to food (and most other  things in life, as a matter of fact), he ended up disappointed with the food and I ended up with a couple of food orders for this week: Greek chicken skewers and lamb chops. So this evening I decided to honour his first request and made him some yummy chicken skewers. I love making them as they are one of the easiest dinners I can put together (less than half an hour), practically cooks itself and as a bonus, gets me points with hubby :-)! Basic ingredients: 600g chicken breast one courgette two small onions, cut into eights cherry tomatoes, cut into halves a couple of peppers Chop everything roughly and add them creatively on the skewers. Paleo living…

So, my friends, a second recipe this week! The first one was dedicated to my little one, this one tonight is dedicated to hubby. Cause he has been on a new diet since we came back to Greece. And cause it has actually simplified my life as I hardly ever cook carbohydrates for dinner during the week now. And has challenged me to come up with new ways to cook chicken and fish and beef… So this week I picked Ainsley Harriott’s 100 Great Chicken Recipes(!!) from our local library and decided for the roasted blackened chicken Itza with cumin sweet potatoes. I replaced the English mustard powder with proper mustard and left out the caster sugar. I made a paste out of black pepper, 1 tsp dried oregano, 1 tsp dried thyme, 1 tsp Moroccan spice mix (instead of the paprika in the initial recipe), 1 tsp of mustard and 1 tsp each of chopped chilli and chopped garlic. I used the paste to coat my chicken and put it in the fridge to …
